Sunday Paleo Night Dinner

Paleo Southern Fried Chicken, roasted celery root with rosemary & thyme (and whole roasted garlic cloves), and then I sauteed some beet greens in the fried chicken pan (using grass-fed beef fat).

When you buy beets don’t throw away the greens, they’re delicious.  Sort of like a bitter tasting version of chard, and like chard, they’re naturally salty.  So even though the golden beets I bought at the farmers market were pricey, the cost plummets when you factor in that I’ll be using 6 beets in about 6 meals (2 with beets, and 4 with the plentiful greens).

Since I was roasting the celery root, I also roasted some cauliflower for a future meal.  I love the way it gets all caramelized!

Dieting does not mean deprivation!  You can have your gluten-free fried chicken and eat it too!  Ugga-Bugga!
