I made some of my paleo matzoh balls and pasture-raised chicken soup for Hanukah! When I first experimented with the paleo matzoh balls, I used my almond butter flat bread recipe, and made the mistake of trying to make them like matzoh balls, when I should have made them like bread! So now I bake them into paleo matzoh ball cupcakes, and they come out great. Look:

With Passover coming, here are some of my recipes for my Jewish readers who want to stay paleo through matzoh week. No, I can’t help you with matzoh, but my flat bread is unleavened, and you can certainly use that as a paleo replacement if you so desire. It won’t taste anything like matzoh, but it is approved by a board of rabbinical cavemen. Can’t help you with the wine (it’s almost paleo anyway), but hey, have you been to one of those long seders, you’re gonna need a glass or two to get you through the night.

My apartment is going to smell amazing for the next 3-4 hours or so. I’m making my Paleo Matzoh Ball Soup again. For the recipe, see THIS and THAT. But for now, I just wanted to show you the prep work.
So easy to make. All the ingredients go in the pot and I let it simmer until the delicious smell becomes so unbearable I can’t not eat it!
All ingredients, all organic, all the time:
Whole pasture raised chicken (I threw the neck, liver and heart in too for flavor, but will take them out before serving)
Celery (some leaves too)
Carrots (some tops too, coarsely chopped up)
Turnips
Parsnip
Yellow Onion
Black Pepper
Sage
Fresh Parsley
Fresh Thyme
Fresh Dill
Filtered Water (use mountain spring water if you have it)
